Preheat your oven first and line your baking trays. I recommend two baking trays to give your cookies room to spread out and grow.
Mix together your butter and sugar until fluffy and combined. Then you’ll want to each one of your eggs, one by one until they are all mixed in. Finally, add your vanilla extract and mix all your wet ingredients together.
Sieve in the flour, baking powder, cinnamon and salt and add the oats and 100g of the Smarties.
The consistency should be slightly sticky. Add a little splash of milk if it is too dry.
Place your cookies on a baking tray, being sure you keep the cookie dough balls separated so they don’t stick together when they spread and bake.
Bake your cookies for about 15 minutes until fully combined.

Substitutions and variations of easy smarties cookies
Change the chocolates
Swap out your Smarties for your other favourite chocolate, think buttons or rolos or even chunks of a Mars bar. I love mixing up the chocolate depending on who I’m baking for.
Add dried fruits
Adding fruit makes these oatmeal Smarties cookies healthy right? Making easy Smarties cookies with dried fruits in takes them to another level, I’ve tried adding dried cranberries, candied oranges and even some cinnamon and apple.
Nuts and seeds
Add some crunch to your cookies by adding some chopped nuts and seeds into the mix. I love mixing walnuts in with the smarties but you can add any of your favourites.
Cocoa powder
Turn these easy Smarties cookies into chocolate Smarties cookies by adding about 20g of cocoa powder. You’ll probably want to reduce the amount of flour in your recipe if you add the cocoa powder just so it isn’t too dry.
Storing easy smarties cookies/ Making ahead of time options
Cookies are best when fresh, especially if they are still a little warm from the oven. I rarely have any leftovers but if you do, pop them in an airtight container in a dark cupboard for 4 – 5 days.
If you want freshly baked cookies tomorrow but know you won’t have time to make them in the morning, make you cookie dough today, ball them into cookie sized pieces and pop your dough in the fridge over night, this will help your cookies stay thick in the oven and not over spread and means you can do the prep work before you need the cookies, win win.
FAQS
Why aren’t my cookies spreading?
You cookies don’t spread if they were too cold going into the oven or if he mixture is too dry, add a splash of milk to your dough if you think it needs to be a bit more moist.
Should you chill cookie dough before baking?
Yes, you should always chill your cookie dough before baking. This will help your cookies hold their shape and not spread out too much in the oven. If you see you cookies spreading too much, put the next batch in the fridge and chill them before baking.
What makes a chewy cookie?
Chewy cookies are made when you have a nice thick cookie dough that has been well chilled before baking so they don’t spread out too much in the oven. Using a mix of white caster sugar and brown sugar in your cookie dough also helps to create thick, chewy cookies.
Why are my cookies hard after they cool?
Your cookies go hard after they cooled because they are over-baked. You want to ensure you take cookies out of the oven a few minutes before they are fully cooked as they continue cooking on the cooling rack as they cool.
