I use ready-made cookie dough and mini eggs in this cheats cookie Easter nests recipe. That’s it, only 2 ingredients! A delicious cookie cup filled with mini eggs ready to be picked out and enjoyed. Making Easter nests with cookie dough can be made easily and quickly by taking a few shortcuts.

After the success of my brilliant Flapjack Easter Nests, I had to finally write up the cookie version. They are so easy to make and look fantastic. They taste wonderful too. I’ve been making these for a few years and only finally have photographed and written them up properly.

Cookie Dough

Pre-made cookie dough is one of life’s simple pleasures. I always like to have some on hand or in the freezer so I can whip up cookies super quickly when I need them. You will have to defrost it if you’ve been storing your cookie dough in the freezer.

You can of course make cookie dough from scratch just follow a normal cookie recipe.

Mini Eggs

The most wonderful Easter chocolate. The colour mini eggs take these cheats cookie cups and turn them into cheats Easter nests. I use about 3 mini eggs per nest but this will depend on how big you make your Easter cookie cups.

How to make Cheats Cookie Easter Nests – step by step

Ball up your cookie dough into inch-sized balls roughly. Just try and make sure all the balls are the same size.

Press your cookie balls into the lined cupcake tin, try and keep the thickness equal all the way round so they cook evenly.

Once fully baked, remove the cookies from the oven and leave them to cool fully on a cooling rack.

Now it’s time to add your mini eggs, you can use as many or as few as you like. You could even break up the mini eggs and sprinkle them into the nest for a more artistic look.

  • Line your cupcake tin with a small square of parchment paper. This will help stop your cookies from sticking to the side.
  • If you don’t have any parchment paper, try using cupcake cases. They are usually bright colours so look lovely round the cheats Easter nests and do the same job as the parchment paper.
  • Save yourself a few mini eggs back to eat as a reward for making such lovely Easter cookie nests.

Ingredients
 

Cookie Nests

  • 300 g (1.27 cups) cookie dough (ready made)

Decorations

  • 150 g (5.29 oz) mini eggs

Instructions
 

  • Preheat the oven to 160ºC fan/ 175ºC / 320ºF.
  • Remove the dough from the freezer for 15 minutes to soften slightly.
  • Add a piece of baking parchment / greaseproof paper or cupcake cases to a fairy cake tin.
  • Divide the cookie dough into 8 pieces.
  • Gently work the dough into a disk shape that fits into the fairy cake to make a little bowl.
  • Bake for 8-10 minutes until golden brown.
  • If the dough rises in the middle when baking then use a teaspoon to gently push it back into shape when you take it out of the oven.
  • Allow to cool in the tin and then remove.

Assembling the bird nest cookie pots

  • Once the cookie nests are cool fill them with your favourite Easter chocolates. I prefer mini eggs as they are so easy to pick out.
  • Serve and enjoy.
