Start by popping a sprig of mint and a slice of lime into your glass. Add some ice to your glass to chill it too.

Chop your strawberries into small chunks and place them at the bottom of your glass also.

Crush your strawberries slightly to release the flavour.

Measure out and pour your white rum over the strawberries.

Top with lemonade and enjoy! I served mine in gorgeous glasses without a straw but you could add a straw to your glass or serve them in mason jars for a vintage look.

Equipment

Ingredients
 

  • 3 medium (3 medium) Strawberries
  • 2 sprigs (2 sprigs) fresh mint
  • 25 ml (25 ml) lime juice (1.5 tablespoons)
  • 12.5 ml (12 ½ ml) sugar syrup (2.5 teaspoons)
  • 50 ml (50 ml) white rum
  • ice cubes
  • 150 ml (150 ml) lemonade (top up the glass with lemonade)

Instructions
 

  • Roughly chop the 3 strawberries and add them to the tall glass with 1 sprig of mint.
  • Measure and add the 25ml lime juice and 12.5ml sugar syrup.
  • Use the cocktail muddler and gently mash the ingredients together. If you are using decorative or thin glasses it might be better to do this step in a mug or jug and then pour it into the glass.
  • Add the ice and the 50ml white rum.
  • Top up with lemonade. Give it a stir with a long spoon to combine all the ingredients.
  • Decorate with a sprig of mint and a slice of lime.
