The best part of the air fryer roast potatoes is that you can parboil the potatoes up to a day before you want to cook them in the air fryer. Simply cook and allow to cool, store in the fridge until you are ready to cook them.

Roast potatoes are best when fresh. I love warm roast potatoes straight from the oven. However, if you do have leftovers after your roast dinner you can pop them in an airtight container in the fridge overnight.

The next day, you can reheat your roast potatoes and enjoy them for breakfast or lunch. Second-day roast potatoes are super tasty.

I would suggest checking them every few minutes once you get to about 20 minutes to get them to the perfect crispiness you want them.

Either goose or duck fat works really well for roast potatoes, personally, I prefer goose fat for my potatoes but this is purely my opinion and you can use either.

Equipment

Ingredients
 

  • 6 medium potatoes I used Maris Piper
  • pinch salt
  • 2 tbsp goose fat (heaped)
  • 1 tbsp plain flour / all purpose flour

Instructions
 

Par Boil Potatoes

  • Peel and chop the potatoes leaving them in chunky pieces. I usally quarter them.
  • Add them to a saucepan and cover with water and a pinch of salt.
  • Bring the water and potatoes to the boil and simmer until you can insert a knife tip easily in.
  • Remove from the heat and drain the water.
  • Place the potatoes back in the now empty saucepan.
  • Add the flour and put the lid on and give the potatoes a good shake to lightly coat them and fluff them up. Leave them to cool until you're 25 minutes from serving.

Air Fry Potatoes in Goose Fat

  • Preheat your air fryer to 190ºC/ 350ºF if you need to.
  • Melt the goose fat in short bursts in the microwave.
  • Use a silicone pastry brush to lightly brush the potatoes with the melted goose fat.
  • Put the potatoes in the air fryer basket and slide them into the air fryer.
  • Cook for about 20-25 minutes. Make sure you check on them at regular intervals and turn them around so they cook evenly. Depending on the size they might need a few minutes more.

Notes

  • You can parboil the potatoes first so they cook even quicker. Normally in about 10 minutes.
  • You can cook them from raw but they will take longer.
  • Add some fresh herbs to serve. I love a sprig of rosemary.

  4. When i used goose fat for my potatoes the kitchen was filled with this white smoke and potatoes not good only done for 10mins any ideas

    • That doesn’t sound good. I haven’t ever heard of goose fat smoking. Was it mixed with something else like olive oil? Where did it come from? If it came from the goose it would need to be rendered before using for potatoes.
