Cranberry flapjacks with white chocolate are a match made in heaven. It’s such a festive flavour and the recipe is so easy to make you can make Christmas flapjacks at the drop of a hat.
Who doesn’t love edible gifts? I know that my friends and family love receiving bakes from me at this time of year. These cranberry flapjacks are one of their favourite snacks to receive at Christmas.

Oats
Flapjacks are primarily made of oats. They add fibre and body to your bake. They can be picked up from any supermarket.
Cranberries
Fresh cranberries are so sharp but they have the most wonderful flavour, so in my bakes, I like to use dried cranberries as they are less sharp but still keep the flavour. You can mix the dried cranberries into the flapjack mix when you add the chocolate.
White Chocolate
Light, creamy and milky, white chocolate chips pair so well with the cranberries in this recipe. The chocolate chips melt into the flapjacks and taste amazing. For these Christmas flapjacks I used white chocolate chips but if you want you can just chop up a bar of white chocolate and mix that in.
How to make White Chocolate and Cranberry Flapjacks – step by step

Place the butter, caster sugar, golden syrup and condensed milk into a saucepan.
Melt the ingredients together on a medium-low heat so they soften and melt gradually. Keep stirring so they don’t burn.
Remove the saucepan from the heat and stir in the oats.
Then add in your dried cranberries and the white chocolate chips.
Pour the mix into the prepared cake tin and level off.
Add a few more white chocolate chips to the top before baking in the oven.
Put the flapjacks in the oven and bake for 20 minutes until golden brown.
Slice it into squares when it was still warm and enjoy.
Top Tips
When they are baked and still warm, gently slice the flapjacks. It’s a lot easier when they are still warm.
Mix your cranberries and white chocolate into the Christmas flapjack mix at the same time once it’s come off the heat. This will help you get a more even flavour distribution.

If you can’t get your hands on white chocolate chips, try chopping up a milkbar bar of white chocolate. It’s a little sweeter and creamier than chocolate chips and works amazing in this recipe.

Take the chocolate out completely and go for winter berries and dried fruits into the flapjack mix. The dark and sharp flavours are wonderful at this time of year.

White Chocolate Cranberry Flapjacks
Ingredients
- 200 g (7 oz) condensed milk
- 300 g (1 cups) unsalted butter
- 250 g (1 cups) golden caster sugar
- 3 tbsp (3 tbsp) golden syrup
- 600 g (7.5 cups) oats
- 150 g white chocolate
- 150 g dried cranberries
Instructions
- Preheat the oven to 170ºC / 160ºC fan / 320ºF / Gask mark 3.
- Line 9 x 12 inch tin with greaseproof paper. It's so much easier for getting them out.
- Add the butter, golden syrup, caster sugar and condensed milk to a saucepan and on a low heat melt together. Keep stirring to make sure it doesn't stick or burn.

- Remove the saucepan from the heat and stir in the oats.
- Stir in the white chocolate and cranberries. Leave a few white chocolate chips to stud the top with.
- Spoon the mix into the tin and level off.
- Bake in the oven for about 20 minutes until light golden brown.
- When freshly baked from the oven gently cut them and leave them to cool.
Notes
- If you want to add flavours, nuts or dried fruit then mix them in with the oats in the recipe.
- As they stay soft you can make them ahead of time.
- They are easy to freeze and defrost when you want a slice or two.
