This delicious Pimm’s cheesecake is the most delicious summer cheesecake no bake dessert. A creamy layer packed full of citrusy flavour takes this fruit topped cheesecake to the next level. This is the perfect Wimbledon no bake cheesecake.

This Pimm’s cheesecake is one of many summer cheese cake ideas that uses two of my favourite things, summer strawberries and the delicious taste of Pimm’s. It’s tangy, sweet and with just a hint of cheesecake sourness, it is one of my favourite summer recipes.

Pimm’s

The most important ingredient in this Pimms cheesecake, Pimms of course. It’s one of my favourite summer drinks, topped with lemonade or prosecco. In this fruit topped cheesecake, the Pimm’s is mixed right into the cheesecake filling.

Fruit

Everyone knows that fruit is vital to a good glass of Pimms and that means our Pimm’s cheesecake has to have fruit too!

A mix of sliced strawberries, cucumber and orange slices. I also recommend adding in some mint leaves to really take that refreshing flavour to the next level.

Biscuits

To give your fruit topped cheesecake a nice sturdy base you’ll need to crush or blend down your favourite biscuits.

Personally, I think digestives make the best cheesecake base. They are absorbent so soak up the melted butter and set nice and firm. But you can use custard creams, shortbread, lotus biscuits or whichever you like!

How to make Pimm’s cheesecake – step by step

Making the cheesecake base

Start making your Pimms cheesecake by crushing your biscuits down and melting some butter in the microwave.

Mix the butter through your biscuits and press them into a spring away cake tin to form your Pimms cheesecake base.

Leave the base to set in the fridge while you prep your fruit and make the cheesecake filling.

Making the cheesecake filling

Add your Pimms to the double cream and get to whipping! Whip your double cream into soft peaks and fold the cream cheese in. Don’t forget to add some icing sugar for sweetness!

Spoon or pour your Pimm’s cheesecake filling into the biscuit base and pop it back in the fridge to set.

Decorate your Pimm’s cheesecake

Now it’s time to decorate!

Use an electric whisk to whip up some double cream and pipe little rosettes around the edge of your cheesecake. You can really have fun here; piping fun shapes or even a P for Pimms!

Then add your fruit. Slice your strawberries, oranges and cucumber and press them into the top of your Pimm’s cheesecake. A few mint leaves will help pull all the flavours together too!

Top Tips for making a Pimm’s Cheesecake

Leave your cheesecake to set overnight before decorating, this will help both the base and filling set fully before you serve. All the flavours will balance perfectly!

Add a few mint leaves to your decoration, I love adding mint to a Pimms cheesecake as the slightly sharp freshness really brings out the flavour of Pimm’s in the cheesecake filling.

Pimm’s cheesecake – Substitutions and variations

Strawberry Cheesecake

You can omit the Pimm’s if you’re looking for a fruity but alcohol-free cheesecake idea. I love making strawberry cheesecake in the summer! Follow my recipe for an easy, fuss-free no-bake summer cheesecake.

Alcohol Free Pimm’s Cheesecake

Follow this recipe but just don’t include the Pimm’s or find your favourite alcohol-free Pimm’s. You can still include all the gorgeous fruit toppings and enjoy a fresh summer cheesecake.

There is a great non-alcoholic Pimms called English Garden by Anon Drinks which would work really well.

Storing / Making ahead of time options

Cheesecakes are best made the day before you need them and decorated in the morning. Cheesecakes need a few hours to set so letting them set overnight is the best use of your time.

You can keep your cheesecake for up to 4 or 5 days in the fridge. After that, the cheesecake may start to taste stale.

Ingredients
 

Biscuit Base

  • 300 g digestives
  • 150 g unsalted butter melted

Pimm's Cheesecake Filling

  • 600 g Philadelphia cream cheese
  • 120 g icing sugar
  • 300 ml double cream / heavy cream
  • 1 zested Orange
  • 50 ml Pimm's

Decoration

  • 150 ml double cream
  • 150 g Strawberries
  • 1 Orange
  • mint leaves
  • ½ cucumber
  • 2 tbsp Pimm’s (optional – to drizzle over the fruit on the cheesecake as you serve)

Instructions
 

Biscuit Base

  • Break up the biscuits in a food processor, or put them in a plastic sandwich bag and use a rolling pin to break them up.
  • Melt the butter in 10-second bursts in the microwave and mix it into the biscuit crumbs when it's melted.
  • Add the buttery crumbs to the cake tin and press down firmly to compact them into a layer.
  • Leave the base to set in the fridge.

Pimm's Cheesecake Filling

  • In a bowl whisk the Philadelphia cream cheese and icing sugar until smooth with an electric hand whisk.
  • Stir in the double cream and Pimm's. Then whisk again until combined and thick.
  • Remove the biscuit base from the fridge and spoon in the creamy filling. Level it out and chill it in the fridge for a few hours or even over night. You could also freeze it for a few hours if you are short on time.

Decoration

  • Using an electric whisk, whip up the double cream until it starts to thicken.
  • Add the double cream to a piping bag with a star nozzle. Pipe the cream around the outside of the cheesecake.
  • Slice the orange, cucumber and strawberries and add them to the cheesecake. Add a few mint leaves to finish it off.
  • Optionally you can drizzle a little extra Pimm's on the fruit as you serve.

    This is the perfect summer cheesecake, utterly delicious and really easy to prepare too. I loved the decoration which was pretty as a picture, but also really easy to follow too without complexity. I’ll definitely be making this again.
