Pimm’s Cocktail – Easy Pimms Spritz

A traditional Pimm’s cocktail is great but my Pimm’s cocktail is even better. This Pimm’s Spritz takes a classic Pimm’s to the next level by mixing Pimm’s and Prosecco to make a fruity and bubbly cocktail. A perfect Wimbledon tennis cocktail and an easy summer party drink to make at home.

This Pimms spritz is the perfect summer drink, it’s light, fruity and fresh. Enjoy this easy Pimms drink in a gorgeous vintage champagne glass in the sunshine with friends. Simply pour your Pimms and prosecco, top with lemonade and serve!

Pimms

This easy Pimms spritz wouldn’t be the same without the summertime classic flavours and toppings of Pimms. It’s fruity and refreshing and works perfectly with sliced fruit in an easy Pimms cocktail. You can also swap out the Pimms for another brand ( for example, Sainsbury’s Pitcher or Asda’s Summer Cup for a couple of lower-budget alternatives).

Prosecco

The perfect Pimms paring, prosecco is light and bubbly! You can even make this into a luxury Pimms spritz by adding champagne instead of prosecco to your Pimms. This drink would be perfect for the cocktail or a summer wedding or to pair with tiny sandwiches at an afternoon tea.

Simply measure your Pimm’s, top with Prosecco and lemonade and enjoy!

You can use frozen strawberries instead of ice in your Pimms spritz, they defrost quickly and won’t water down your drink! Win – Win.

Substitutions and variations

Other brands of Pimms drink could be used instead of Pimms.

Asda has its own brand called Summer Cup, and Sainsbury’s offers Pitchers. These are both great, own-brand gin liqueurs that go perfectly in this easy Pimms cocktail.

You can also swap out the Prosecco for all lemonade if you would prefer a lower alcohol Pimms cocktail. Just remember that Pimms contains alcohol whether or not you top it with Prosecco or lemonade.

Making ahead-of-time options

Pimm’s is best enjoyed when served and made fresh. This cocktail only takes a couple of minutes to whip up so I would suggest making this just before you plan to serve.

The good part about pimm’s is you can prepare the fruit and topping in advance and keep in the fridge until ready.

You can also make this easy Pimms spritz into a large pourable drink by scaling up the Pimms, prosecco and lemonade.

If you want to help keep the drink cold you can freeze the strawberries in advance and use them instead of ice cubes. They don’t take long to defrost so you will still be able to eat them once you’ve enjoyed your Pimm’s Spritz.

Ingredients
 

  • Ice Cubes (optional – see notes below)
  • 2 Frozen Strawberries
  • 50 ml Pimm's
  • 50 ml Prosecco
  • 100 ml Lemonade
  • 1 slice Orange
  • 2 slices cucumber
  • 1 sprig fresh mint

Instructions
 

  • Add the frozen strawberries, orange slice and cucumber slices into the cocktail glass.
  • Measure and pour in the 50ml Pimm's and 50ml Prosecco.
  • Top up with lemonade.
  • Add a sprig of fresh mint and serve.

  • I use frozen whole strawberries for this cocktail as it saves using ice but also chills the glass. You can still use ice of course.
  • Best served straight away to help keep the bubbles.
