My fresh basil and parsley spaghetti salad is so fresh and packs a punch of flavour. It works so well for lunch or dinner and also is delicious cold for lunch boxes too.
How to make the fresh basil and parsley spaghetti salad
This dish is so easy to make and doesn’t take long at all. Enjoy making it! I hope you love it as much as me.
Layer the ingredients in a bowl as you chop them up. Mix them together and add the freshly cooked spaghetti on top. Mix again and serve straight away. the fresh herbs add such a wonderful flavour and mixed with the vinegar dressing it is a lovely taste. The crunch of the red onion and softness of the tomatoes and spaghetti works so well.
It’s so light and easy to eat. The taste is wonderful and this is always my go to quick dinner.
Easy spaghetti dinner
The flavour of this salad is incredible. I love it. Whether it’s for lunch, dinner or for lunch box the next day I am addicted to this dish. It really has the incredible summer flavours and mixes is freshness and healthiness. It is also a great dish for parties and barbecues. It’s easy to change a few things to make it perfect for everyone. The herbs are what is so important for this dish. They take it to the next level of flavour.
What is so easy about this dish is that you throw everything together and stir. It’s also wonderful how long it lasts if you have any leftovers. I rarely do but sometimes when I do, I love finding a little extra in the fridge.

Fresh Basil and Parsley Spaghetti Salad
Ingredients
- 200 g of spaghetti
- 1 small red onion
- 300 g baby or plum tomatoes
- 100 g olives
- handful of flat leaf parsley
- handful of basil
- 2 tablespoons on capers
- 2 tablespoons red wine vinegar
- 4 tablespoons olive oil
- red chilli optional
Instructions
- Cook the spaghetti as per the instructions on the packet
- While the spaghetti is cooking chop up the tomatoes and herbs plus thinly slice the red onion and add it to a large serving bowl. Add the olives and capers too.
- Drizzle the red wine vinegar and olive oil too.
- When the spaghetti is cooked mix all the ingredients together and then serve.
