A fresh and fruity easy drink, the White Rum Pineapple Cocktail is quick to make. This no shake, tall drink will refresh you as a cocktail for a sunny day at home or will be a hit as an easy party cocktail with friends and family. Bacardi white rum is often over looked for cocktails at home so I set out to make an easy Bacardi white rum cocktail.
We might be in lockdown but that does not stop a cocktail party. The parties are now virtual parties but luckily the cocktails are still real. I’ve been taking requests for cocktails on my Instagram account. I asked for anyone to message if they want help coming up with something easy to make at home.
We all have those odd bottles in the cupboard that we were given that we aren’t 100% sure what to do with. So I’m here to experiment with my collection to create easy drinks. Today it’s white rum!
White Rum Pineapple Cocktail
I’ve said it before but white rum is definitely under used for drinks in my view. It’s so versatile and can be used with so many drinks just like vodka. White rum compliments citrus and tropical flavours really well.
So you have your lovely lime and lemon but also tropical juices and pineapple are winners. You can keep it simple and enjoy a white rum and pineapple juice or add some limoncello juice like in my recipe. A great little pimp up for cocktail hour.
This is lovely and light. It’s super fruity too. If I could I would prefer to enjoy it on a beach or by a pool in the sunshine. However I will be enjoying this in the safety of my little urban garden. A little lovely glass of sunshine to enjoy with some fresh air. I’ve found making new drinks helps make me feel a bit more normal among the anxiety of these weird times.
This will be a great drink to make for a sharing jug for parties but until then a single drink will do nicely.

White Rum Pineapple Cocktail
Ingredients
- ice cubes
- 50 ml (50 ml) white rum
- 12 ml (12 ml) sugar syrup (about a tablespoon)
- 12 ml (12 ml) lemon juice (about a tablespoon)
- 25 ml (25 ml) limoncello
- pineapple juice
Instructions
- Add the ice to a tall glass.
- Add the rum, sugar syrup, lemon juice and limoncello to the glass and give it a stir gently with a long spoon or straw.
- Top up with pineapple juice and serve.

I never know what to do with limoncello, not a fan by itself, but in this recipe. Fab! Was so surprised to see it in the recipe and it makes the whole drink come together.
