No bake cheesecake are, in my opinion of the best and easiest things you can make at home. They only need a cool fridge and a few hours from initial ingredients to start with to serving. The quickest you can go from making to serving is about one and a half hours.

Why make a no-bake cheesecake instead of baked cheesecake?

Simple – they’re really easy as well as being creamy and delicious.

A traditional baked cheesecake is a thing of beauty but simply by their nature, they do take longer to make. They can also be trickier to master and they can crack or curdle. So I am a huge fan of the no-bake version – in fact I have developed lots of delicious varieties.

Many no-bake cheesecakes use gelatin to help set the cheesecake but I do not find this necessary. This means that my cheesecake recipes are suitable for vegetarians.

Can I make no-bake cheesecake ahead of time?

You can make every single one of these cheesecakes ahead of time. You can keep them in the fridge until you need them. I often make these the day before I need them. To start I will do the base, cream cheese layer and any toppings which won’t change or move before serving. I keep fresh fruit or anything that might be juicy until just about to serve.

I would recommend removing the cheesecake from the cake tin after 1 hour of setting. If the cheesecake is left in the tin for too long it can be harder to get out. I remove it after an hour and place it on the plate it will be served on and pop it back in to the fridge until it is ready.

How do you thicken a no-bake cheesecake?

To make sure the cheesecake is going to set make sure you drain off any excess water from the cream cheese before mixing with the sugar.

Also make sure the double cream that you use is whipped up until thick. When it is mixed with the cream cheese it will lose some of it’s thickness so we need it to be thick to start with.

Make sure you don’t use anything runny in the cream cheese mixture that will be stop it setting.

If you do want to add something try adding it as a layer or add some extra icing sugar to thicken up the mixture.

What cream cheese is best for no-bake cheesecake?

Most cream cheeses are best for cheesecake. The full fat versions are great and do give a great taste. Unlike in baked cheesecakes, the reduced fat varieties can still work.

In both cases if there is any water on top remove it before adding the cheese to the mix. Water can make the final cheesecake not set as well.

Branded cream cheese vs own brands

There are so many different types of cream cheese available and having tried a few different ones I think they all work pretty well.

Philadelphia is probably the most well known brand in the UK and US and this is obviously great to use. But I mostly use supermarket own brand varieties and they are just as good.

I would however recommend that you avoid using super savers versions as sometimes they can be a bit bitty and not have the nicest flavour. I would also recommend that you avoid any flavoured varieties.

How do I store no-bake cheesecake?

You will need to store your cheesecake in the fridge. It is a good idea to cover it if you can to prevent it from absorbing other flavours from the fridge.

A well stored cheesecake will keep for up to 3 days. This means that you can make it up to several days in advance. I do recommend that you do not add the whipped cream and biscuit decoration until you are nearly ready to serve.

If needed you could add the whipped cream the day before but the biscuits should be added last minute or they will go soft and sad.

You can serve and eat the cheesecake chilled straight from the fridge.

Can I freeze no-bake cheesecake?

No bake cheesecakes are ideal to freeze. You should remove the cheesecake from the tin and wrap it in clingfilm (saran wrap) then freeze. Storing it in an airtight container will add an extra layer of protection if you have room in the freezer.

To thaw the cheesecake, take it out of the freezer the day before and leave it in the fridge overnight to defrost.

I would not recommend decorating the cheesecake before freezing so this should be done once the cheesecake has thawed. This includes any whipped cream, extra chocolate or biscuits and chocolate pieces.

Some chocolate and fruit layers can be frozen but you should check the individual recipe instructions to confirm.
